When it comes to baked goods, there is nothing like the cupcake. I suppose you could say well, yes, there is something like the cupcake and it’s called cake. But I see one, huge difference between these two. When a cake is present, it’s implied that it will be shared; it will be sliced up and made smaller so that everyone can benefit. While this is a commendable act on the cake’s part, it doesn’t exactly appeal to me. Consider the cupcake – a cupcake is intended for one person, you. You don’t have to share it with anyone else. There’s no shame in this selfish indulgence and you don’t have to worry about petty formalities like the use of a fork. It is a little piece of indulgence, a bright spot in an otherwise gray day.

1 c. shredded, sweetened coconut.

3/4 c. water.

4 c. shaved ice.

On stove top, bring water to a boil.

Add coconut.

Reduce fire.

Saute' for 7 min.   Chill.

Serve over shaved ice.

1 cup shredded cheese of your choice.
1/4 cup rinsed and diced bread and butter pickles.
1 tbs. mayo.
1 tsp. vinegar.
1/2 tsp. black or white pepper.
Mix.
For variety, try folding in thawed frozen peas.
Use on bread for sandwiches, crackers for hors doeuvres.
